A Bestselling Book Built on Correlation
While The China Study has inspired a global shift toward plant-based eating, its conclusions rest entirely on correlational data. Dr. Bikman explains why correlation does not equal causation—just as ice cream consumption doesn’t cause drowning, dietary protein can’t automatically be blamed for disease without stronger evidence.
Animal Studies That Oversimplify the Issue
The book’s arguments are bolstered by rat studies involving purified casein (a dairy protein) and a liver carcinogen. But these studies ignore whole-food context and even contradict other research showing that different animal proteins (like whey or fish) may be protective. Importantly, when carcinogens weren’t present, casein did not induce cancer. Even some plant protein combinations have promoted tumors in rodent models. Dr. Bikman notes: “It’s not about plant vs. animal—it’s about the full nutritional context.”
The Missing Link: Insulin and Refined Carbohydrates
Instead of focusing on protein, Dr. Bikman urges us to look at insulin—especially the chronically elevated insulin levels (hyperinsulinemia) caused by diets high in refined carbohydrates. Citing data from a 2011 study, he explains how insulin activates the mTOR pathway much more potently and persistently than amino acids like leucine. If mTOR plays a role in cancer, insulin—not meat—may be the real concern.
Rethinking Protein, Dairy, and Disease
The China Study isolates a single protein and ignores beneficial components of whole dairy foods—like CLA and butyrate—which may have anti-cancer effects. Observational studies even show protective associations between dairy fat intake and reduced cancer risk. Likewise, other large-scale studies have found no consistent link between animal protein and cancer—and in some cases, found a protective effect, especially among older adults.
